I am looking to file for my fiancé in a year, I have visited her numerous times, communicated with her regularly via email and phone calls etc., so we have established a relationship since 2007. We wanted to travel to a small island in the Caribbean for a vacation, by me meeting her on the island we chose. My question is, will us traveling to another country other than the country she now resides, affect my chances of filing for her (k1 visa) as a fiancé to live with me in the United States in a year? Our passports would have the same vacation date and destination stamped inside them, to prove we travelled as a couple.

The two of you travelling together will help demonstrate a genuine relationship exists. You should keep all records related to the trip such as airline tickets, invoices, hotel confirmations, etc. You should also make sure to keep photographs of the two of you on vacation. This information can help bolster your claim that the relationship is genuine.
